Our bread was created and inspired by Lilli, Jim’s daughter. Lilli suffers from a couple of auto-immune conditions that make food like bread make her sick. Gluten-free bread was not the answer, as Lilli found the taste unsatisfactory. So, Jim found a wheat flour that is processed to keep the gluten intact in the wheat germ. What that means is the wheat germ is not spilling gluten all over the processed flour. He created a real bread that Lilli could eat without getting sick. And, it tastes delicious and is healthy.
